What are we all about?                                                       
3 Squares Café, located in historic downtown Vergennes, offers creatively prepared and generous portions of delicious breakfast, lunch, and dinner options.  Open seven days a week, 3 Squares welcomes your entire family into its casual atmosphere. 

The eclectic vibrancy of 3 Squares and our smiling staff keeps our patrons coming back for more.  We proudly offer local and homemade products featuring locally-roasted coffee and espresso, fresh baked muffins and scones, decadent brownies, tasty soups, artisan cheeses, and unique local retail products.  Our breakfast, lunch, and dinner options cater to all palettes… no matter if you are craving a breakfast burrito, a homemade hummus pita, or a juicy Boyden Farm organic burger.  MMmmmm…..


How did it all begin? 

After Matt Birong, chef and owner of 3 Squares, spent five years catching for the Yankees….nah, just kidding!  Here’s the real story… Matt, a Vermont native and graduate of New England Culinary Institute, interned at the prestigious Rainbow Room in New York City.  In 1997, he headed to the south end of Boston where he worked at Metropolis Café and soon after became Sous Chef at Aquitaine at the tender age of 22. 

Five years passed, and Matt yearned to return to the green mountains of Vermont.   He spent three years as Executive Chef of the Waiting Room and also spent one year at Leunig’s, both located in Burlington.  In 2007, after two years of searching high and low for just the right place, Matt opened 3 Squares Café. 

We think that you will find that Matt brings to 3 Squares Café a little taste of his culinary past, fresh new options, and a flavor that is distinctly its own!
